Casino Night Zone - This classic stage from the original Sonic the Hedgehog games was an instant favourite, the bright flashing lights certainly attracted a huge number of players and the music also became instantly recognizable too as one of the most popular sonic soundtracks, but also because of the mini games included within the stage that gave a bit of a different feeling too - the pinball mechanics in the stage provided something completely different to what other games were doing at the time, and became a staple in the sonic games as something that had been present in a number of different titles since.
Balloon Park - The carnival themed stage from Sonic the Hedgehog 3 is another player favourite - the instantly catchy music get's stuck in your head, and although there aren't any exciting mechanics within the game like pinball from casino night zone, the look and feel does provide something very similar. The stage also gained some popularity through a "cheat" allowing the stage to be finished in mere seconds by abusing one of the balloon jumps, something that was later removed from Sonic 3 & Knuckles.
Casino Forest - Previously known as Project Sonic 2017 and later branded as Sonic Forces, this 2017 game is one of the more recent entries of the game. By combining two of the more favoured aesthetics with Casino Night and the Forest, Casino Forest took all that made the former popular with the music and the minigames like pinball and put them into a modern game, to deliver the exciting stage to a whole new generation who may not have experienced the original classic from the older consoles and the older games.
With a few new Sonic games planned for 2021 to coincide with the 30th anniversary, it wouldn't be all to surprising to see many of these favourites reimagined in a modern setting once again, although we may not see any details of what can be expected until the finally release, but with graphics on platforms like Switch, they'll certainly be just as good as the times in the past.
